Family Meal Plan, 12/28 – 1/4. Happy New Year!

Saturday, December 28Ā 

Breakfast: Pancakes or waffles, Chef’s Choice
Lunch: Hot dogs
Dinner:
Turkey Basmati Rice Pilaf and Thalipeeth

Tasks: Soak pintos, black-eyed peas and chickpeas during the day; cook overnight. Make chicken broth in the stock pot. Thaw out the creamer in the freezer and make more creamer ice cubes. Thaw out 1 pkg. of frozen grated cucumber.

Sunday, December 29 – Birthday boy’s menu! And the birthday boy has requested an orange cake with chocolate frosting. Wait, strawberry frosting! Wait, both! (I talked him down to a chocolate cake with orange frosting on one side and strawberry on the other. :p )

Breakfast: Eggs and toast
Lunch: Chicken soup with carrots and chicken and broccoli that’sĀ  melted down like the broccoli soup we had that had bread in it. (His words, people, his words.) And strawberries.
Dinner: Mushroom and onion pizza and cake

Tasks: Bag up and freeze the cooked beans.

Monday, December 30

Breakfast: Leftover waffles
Lunch: Christmas with family
Dinner:
Christmas with family

Tasks: Get on the road as quickly as possible.

Tuesday, December 31

Breakfast: Scrambled eggs
Lunch: Spaghetti and meatballs
Dinner: Okra Raita, Every Day Yellow Dal, and Black-eyed pea Salad

Tasks: Thaw out a pound of ground beef and okra in the morning. Soak oats for breakfast. Thaw out and use some of the liver cubes in the meatballs.

Wednesday, January 1

Breakfast: Baked Oatmeal
Lunch: Leftovers
Dinner:
Baked Tilapia and broccoli

Tasks: Thaw out chili. Pack N’s lunch.

Thursday, January 2 – get a birthday card in the mail to Poppa W.

Breakfast: Paleo Pumpkin, Lemon Poppyseed, Banana, and Cherry Muffins
Lunch: Leftovers
Dinner:
Chili and cornbread, Peach ice cream for dessert

Tasks: Pack N’s lunch. Freeze half of the leftover muffins. Thaw out chicken.

Friday, January 3

Breakfast: Breakfast rice with raisins
Lunch: Leftovers or sandwiches
Dinner: Roasted Chicken, sweet potatoes, and Brussels spouts

Tasks: Make new meal plan/go grocery shopping.

Two-ish Week Meal Plan or…What we’ll eat until we leave

Two-ish Week Meal Plan:

My goals are to get us planned out through our upcoming Christmas trip, minimize grocery shopping trips, and increase the amount of sanity flowing into December. (It beats the alternative, right? šŸ˜‰ )

Monday, December 2 – Cello lesson night

Breakfast: Yogurt and fruit salad, scrambled eggs
Lunch: Leftovers
Dinner:
Turkey kale soup, make up a recipe using onions, celery, and leftover butternut squash

Tasks: Make and bake bread. Thaw out a pound of ground beef.

Tuesday, December 3 – Evening Mom’s Group Christmas Party

Breakfast:Ā Banana muffins and Paleo Pumpkin Muffins
Lunch: TurkeyĀ  Salad with Coconut Flour Crepes
Dinner: Eggroll in a Bowl

Tasks: Make three dozen cookies for the party.

Wednesday, December 4 – work from home day!

Breakfast: Egg and cheese biscuits
Lunch: Tuna salad
Dinner:
Chicken stuffing casserole

Tasks: Make a Pumpkin Crisp.

Thursday, December 5 – a.m. Homeschool Christmas Party, evening hosting of small group

Breakfast: Fisherman’s Breakfast

Tasks: Make Slab Apple Pie, Cranberry Apple Walnut Cake, and Oatmeal Raisin cookies for small group

Dinner: Meatloaf, salad, and sweet potato fries

Tasks: Thaw out a pound of ground beef. Soak oats for Sunday’s baked oatmeal.
